Almond Biscuits With LifeTree Premium Almonds

Yes, it’s eggless! Almond Biscuits are unique for their delectable texture which is crunchy when bitten into and cottony when chewed. This recipe, combined with LifeTree’s Premium Almonds, would be perfect for high tea or laid back coffee/hot chocolate sesh.

Ingredients:

  • ½ cup LifeTree Premium Almonds
  • ½ cup vegetable oil
  • ½ cup powdered sugar / sugar substitute
  • 1 ½ cups all purpose flour (maida)
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ tbsp cinnamon (dalchini) powder
  • ¼ teaspoon vanilla essence
  • 1 teaspoon lemon juice/white vinegar

Recipe :

-Pour vegetable oil into a bowl and add powder sugar/sugar substitute (tweak according to your preferred sweetness). Whisk until the mixture turns light and fluffy.

-Add baking powder, baking soda, cinnamon powder, vanilla essence and lemon juice to the mixture. Whisk again.

-Add sliced LifeTree Premium Almonds to the mixture.

-Add the all purpose flour to the mixture and bind the mixture into a dough with 2-3 spoons of water. Refrain from adding too much water in this step!

Place the dough in a greased baking tray lined with butter paper and bake them for 30 minutes in a preheated oven at 180°C. Tweak the baking mode to a microwave in confection mode or you can go ahead with using a kadhai as well. (Bake on the stove for about 30-40 minutes on low medium flame. Take the liberty to check on it from time to time.)

-Let them cool completely and slice them according to your preferred shape.

-Bake them again for 30 minutes in a preheated oven at 180°C and flip them after 15 minutes. Again bake for 15 minutes. (Heat on the stove on a low medium flame for about 15-20 minutes on both sides.)

-Let your Almond Biscuits cool completely and enjoy with your favorite beverage!
