• 1 cup unsalted butter softened to room temperature
• 3/4 cup confectioners’ sugar/sugar substitute.
• 1 teaspoon pure vanilla extract
• 1 teaspoon almond extract
• 2 ¼ cups all-purpose flour

Method:

• Chop/blend the pistachios into a fine crumb.
• Beat/ blend room temperature butter and add sugar/sugar substitute.
• Add vanilla or almond extract, then add the pistachio crumb to the mixture until combined and form a dough.
• Cover and chill the cookie dough for 30 minutes, then roll into balls.
• Bake in a preheated oven/microwave/kadhai until lightly browned.
